New Brazilian collagen producer says redesigned production process is a differentiator

New niche in an old market

Any collagen installation should be located close to the source of raw material, which in the case of PepTech is cowhide. So having the new facility located in the western part of the state of Sao Paulo is no surprise, Chaluppe said. Brazil is the world’s largest beef exporter.

But that’s where PepTech’s similarity to other collagen producers ends, Chaluppe said. He has a long history in the collagen business having worked at companies like Rousselot and Gelnex, which is a major Brazilian producer of collagen and gelatin.

Chaluppe said the experience gave him insight into what works and what doesn’t in the business. And it gave him insight into the opportunities that remained to be tapped in what at first glance appears to be a mature and crowded market.

“Over the years, I have visited about 40 different collagen and gelatin facilities,”Chaluppe told NutraIngredients-LATAM.

Cut the gelatin

“To be a new producer in this consolidated market, we had to find a way to do something different”he said. “What we came up with was to skip the gelatin process completely.”

Chaluppe said most of the companies offering collagen as an ingredient are actually gelatin producers first and foremost. Collagen comes from the gelatin extracted from the skins (or in the melting of fish products, the skeletons). It is usually a complicated chemical engineering process with many steps and can generate a lot of waste, he said.

In the case of PepTech, the co-founders say they’ve found a way to streamline the process and remove some of the chemical inputs. The process begins in the same way as the gelatin-collagen processes, with the grinding and cooking of the skins. It deviates from it, however, by inserting a purification step based on a proprietary filtration process.

“We engage in enzymatic skin washing which is very minimal. Then we cook them and then the ingredient goes through a purification process that is all physical. We got a better process with less water and without chemicals ”,he said.

Clean up a potentially messy business

The partners have also sought to differentiate their ingredients through their sourcing agreements. The beef industry in Brazil includes animals that conservationists say were raised on plots of razed rainforest, with all the grim images of displaced indigenous peoples, habitat destruction and global climate change that this image evokes.

To counter these potential drawbacks of their new ingredient, Chaluppe said the company has made the decision to partner with a group of certified bovine hides producers. Leather working group, An international consortium of tanners. This means they operate to the highest industry standards for environmental, social and business protocols, Chaluppe said. The organization includes dozens of member companies audited in Brazil.

“Our process is a batch process, while the other types use a continuous process that starts with gelatin. For us, there is a clean cut from one lot to another, and our scale allows us to select specific partners ”,said Chaluppe.

“Leather Working Group certification includes extensive audits of things like water and chemical use. By passing through this channel, we can trace the raw material of any batch to the pastures where the animals were raised ”,he said.
